A fudge pie hasn’t been made in my house in a good many years, today, I just wanted one.. Thought since Valentine’s Day is approaching that I would put hearts on it.. If you do this as well, wait until pie is half way through cooking, would probably look better and not sink like mine did…
1 clean pie crust( brown rice flour makes an excellent crust)
1/2 c. Clean organic chocolate chips
1/4 c. Unsalted butter
1/2-3/4 c. Raw sugar
2 eggs, beatened
1 tsp pure vanilla
4 tbsp whole wheat pastry flour
Pre-heat oven to 375.
In small saucepan, melt butter and choc on low to med heat. Stir constantly til smooth. In a medium bowl, mix all other ingredients . Pour melted choc into mixture. Blend well.
If you wish to put the hearts on the pie, use a cookie cutter to cut them out of left over pie crust dough. Brush with a bit of egg white, then sprinkle a touch of raw sugar on . After pie has been in oven about 10-15 min, gently place on pie and finish baking.
