Wild Rice with Mushroom Bake


Wild and brown rice 

1 tsp sea salt

2 tbsp olive oil

1 pkg white mushrooms,chopped

1 lg onion,chopped

1 med green bell,chopped

1 med red bell, chopped

1 2/3 c. Chicken broth

2 tbsp potato starch 

1/4 c. Cold water

1/2 c slivered almonds


Cook rice according to pkg directions. I use this rice,

In a small bowl mix potato starch and water together. 

I use this one.

Meanwhile ,in a lg skillet, heat oil. Sauté onion,peppers and mushrooms til tender.stir in broth and sea salt. Bring to a boil.stir in the starch and water mixture.cook and stir until thickened, 1-2 minutes.remove from heat and stir in almonds.

Add rice to mushroom mixture. Blend well.


Transfer to greased baking dish. Cover and bake at 350 for25 min.uncover and bake 5-10 min or til heated thoroughly .
