Pumpkin Squares

The beginnings of Fall are around us, geese are flying South,leaves are turning colors, people have put mums in their yards…but it is still  warm and muggy here in the South. Either way, I thought I would cook some pumpkin today to try to feel like it is Fall weather. Who am I kidding? I just love pumpkin!


1/4 c. Unsalted butter

3/4 c. Demetria sugar

1 tbsp unsulfered molasses

1 lb pumpkin purée ( or 1 can pure pumpkin)

2 tsp pure vanilla

1 egg

2 egg whites

3/4 c. Whole wheat pastry flour

1/2 tsp soda

1/8 tsp sea salt

1 tsp cinnamon

1 tsp nutmeg

1/2 tsp ginger

1 cup golden raisins

1/2 c. Chopped pecans


Preheat oven to 350. Spray a 13×9 pan ,set aside. In a large saucepan, melt butter. Remove from heat and stir in sugar,molasses,pumpkin,vanilla and eggs. Stir in remaining ingredients blending well.

Pour into greased pan. Bake 25-30 min or til top springs back. Cool, cut into small squares.
