We eat a ton of chicken. I have old recipes that I have cleaned up and chicken recipes that I use from clean eating magazine both on a regular basis. Today I am again eating chicken but thought I would do something new. This recipe is the result.
3 tbsp unsalted butter
1/4 c white whole wheat flour
1 1/2 c chicken broth
2 tbsp sherry
1/8 tsp nutmeg
1/2 c soymilk(unsweetened )
1 tbsp potato starch
1 tbsp white wheat flour
3-4 boneless,skinless chicken breasts, cooked and cut in half
2 pkgs broccoli spears, steamed or cooked ( was out of fresh)
1/4 c Parmesan cheese,grated
1/2 c shredded Parmesan .
In small bowl ,combine soymilk,1 tbsp starch and 1 tbsp flour. Set aside.
Melt butter in med saucepan over low heat.blend in 1/4 c flour. Cook over low heat, stirring til smooth and bubbly.remove from heat. Stir in chicken broth. Heat to boiling, stirring constantly for one minute.remove from heat. Stir in sherry and nutmeg. Gently fold in soymilk mixture and the grated Parmesan .
Preheat oven to broil. Broil 3-5 inches from heat til cheese is golden brown.
