Chili lime Chicken with Black Bean Salsa


It feels good to be creative again!



1 can black beans,rinsed and drained

3/4 cup whole kernel Corn

2 tbsp chopped red onion

1 tbsp cilantro

2 tbsp lime juice

1 tbsp olive oil

1 med tomato, chopped

Black pepper to taste.


2-3 boneless,skinless chicken breasts, halved

2 1/2 tbsp coconut oil

1-2 tbsp lime juice

Chili powder

Black pepper


In a bowl mix all ingredients for salsa ,set aside. In a sauté pan, heat the oil and lime juice together. Sprinkle chicken with seasoning on both sides. Cook in heated oil til white on inside, slightly browned on outside. Serving is one half chicken breast with about 3/4 cup of salsa on top of chicken. Great with a side salad.
