Wow! This has been a exciting ,busy and tiring week already.. First off, let me show off my newest granddaughter, Alianna Joy! Isn’t she just precious? She was born just less than a week ago.. Congrats to my son and his wife!
I do believe that was the longest 5 hour ride back home after spending time with my 3 grand children and their parents that I may have ever had. I just wanted to turn around and go back!
But alas , it couldn’t be.. It is beginning to be early Spring and I am needed at our plant nursery. We are now back to 7 days a week until mid June.. In order to make sure that we continue to eat clean during this crazy time of the year, I will be doubling up on prep work and cooking double early on Sunday mornings before going to work..
Well on to the recipe at hand!
My hubby used to buy this crap in a can called “Chili Mac”. I think almost half the can was grease. I made this for him after work today and he loves it! I made a huge casserole dish full so I don’t have to cook tomorrow and still be able to freeze a little for later quick meals. This can be for meat lovers or made vegan. 12 oz elbow macaroni ( 100% whole wheat, rice noodles or quinoa noodles)
1 1/2 tbsp olive oil
1/2 cup chopped onion
3 tbsp whole wheat pastry flour
2 cups unsweetened soy milk ( or milk of choice)
1/2 tsp sea salt
1/4 tsp cayenne
1 cup shredded cheddar or vegan cheese
about 3 cups of your favorite chili
-Pre-heat oven to 375 degrees
-Boil noodles according to pkg directions. drain and set aside
-Heat oil on med in a med sauce pan, add onion, cook , stirring occasionally about 5 minutes til softened. Add flour, stir and cook for about a minute. reduce heat, pour in milk, whisking to mix. Continue to cook, stirring until mix thickens, about 2-4 minutes.Add sea salt and cayenne. Pour into a large bowl.
-Add the drained noodles and 1/2 c. of the cheese to bowl. Mix well to combine.
-In a casserole dish, pour the noodle -cheese mixture and spread evenly throughout the dish
-Spread your chili or vegan chili on top of the noodles.
-Sprinkle the remaining 1/2 cup of cheese over the chili.
Bake for 30 min.
I hope that you enjoy as much as we did. This would be great with cornbread and /or a salad.
I can’t wait to try more recipes with the Quinoa noodles. They cook up so big and tender. I also like all the proteins and vitamins in Quinoa!
