Glazed Blueberry, Almond and Lemon Muffins

Glazed Blueberry, Almond and Lemon Muffins

 

Ingredients

1 c. whole wheat pastry flour

1 c Almond Flour

1 tsp baking powder

1/2 tsp baking soda

1/4 c natural sugar

1/2 tsp sea salt

1/8 tsp nutmeg

3 tbsp chilled butter, cut into small pieces

1 1/4 c unsweetened soy milk( or milk of choice)

1 tbsp lemon juice

1 lg egg, beaten

1 c. blueberries

1/2 c sliced almonds

Glaze

1/4 c. turbinado sugar

1 tbsp lemon juice

1 tbsp water

Preheat oven to 400 degrees. Spray muffin pans, set to the side. (makes 12-18)

Mix first 7 ingredients together in a medium bowl. Cut in butter til mixture looks crumbly. Make a well in center of flour.

Combine milk, egg and juice with a whisk. Add to flour mixture, stir til moist. Gently fold in berries and almonds.

Spoon batter into muffin pans. Bake for about 20 min or til tops spring back when touched.

Remove from pans immediately , let cool completely.

Ina small sauce pan, combine the glaze ingredients, heat slowly to just a boil, stirring occasionally. Remove from heat.Drizzle or spoon evenly over muffin tops.
