This past growing season, my hubby grew kohlrabi and we ended up just freezing it to try later.. everytime I would go get something out of the freezer,I would see it but kept moving it out of the way. I just wasn’t sure what to do with it. Well, the freezer is getting low in variety so ….. I really don’t know why I procrastinated so long on trying this wonderful veggie! It is like a Brussels sprout when roasted, yet, a bit sweeter.. I can’t wait to try something with the top greens off of this plant, I am hoping that they will be just as yummy. I think this Summer that I may try to make chips out of the greens..
In the meantime, here’s how I roasted my kohlrabi;
4-5 small-med kohlrabi, peeled and sliced
1 tbsp olive oil
1 minced clove of garlic
sea salt and black pepper to taste
1/2 tsp Thyme
1/3 c mozzarella, shredded
Spray a casserole dish. Preheat oven to 350.
Mix all ingredients except cheese together in a bowl. Scoop ingredients into a single layer in bottom of casserole dish.Bake about 20-25 min or til kohlrabi is tender.Sprinkle Mozzarella over the top. Bake additional 4-5 min or til cheese is melted. Serve while warm.
