This wrap is a great way to use that left over baked or grilled chicken! Also perfect for lunch or a mid afternoon mini meal (cut in half and serve with a small portion of fruit).
1 1/2 chopped cooked chicken breast
1/4 c. chopped finely cucumber
1/4 c. finely chopped zucchini
1/4 c. finely chopped bell pepper
1 tbsp Parsley
1/4 c Greek yogurt or Veganaise
2 tbsp lemon juice
4-5 leaves Romaine lettuce, chopped up
4 100% whole wheat tortillas
Combine all ingredients except for the lettuce and tortillas. Then divide lettuce on the tortillas, then top with chicken mixture. Roll up.
