Simply a Little Gem of a Cake…

This little gem is so simple to make, yet tastes anything but! It is a great cake for a treat during the week, Sunday dinner or even company.  My thoughts were to create something easy with what was in my pantry and fridge. My fingers were crossed as I only used one egg. The cake rose well and is so moist, I cheated and had seconds…

Ingredients

Cake

1 1/4 white wheat flour

1/2 c. raw sugar

1/3 c. unsalted butter,softened

3/4 c. soy milk, unsweetened

1 tsp pure vanilla

1 1/2 tsp baking powder

1/2 tsp sea salt

1 egg

Topping

1 c. unsweetened shredded coconut

1 small can of pineapple tidbits ( no added ingredients)

1/3 c turbindo sugar

2 1/2 tbsp softened unsalted butter

2 tbsp soy milk

Directions

Heat oven to 350 degrees. Grease bottom of 8 inch square pan or baking dish.

In a med bowl, mix all ingredients for cake with an electric mixer for about 4 minutes. Pour into pan. Bake for about 30 minutes or til golden brown and toothpick comes out clean.

While cake is baking, mix all ingredients for the topping in a small to med bowl.

When cake is done, turn oven to broil. Spread topping evenly over the top of hot cake, Broil for about 2-4 min or til topping is lightly browned.

The cake is wonderful served warm or at room temp.
