Tomato pie is great as a side dish or as a main dish served with a salad. I normally like to make with heirloom tomatoes but they are not in season so I am using Roma tomatoes.
1 baked pie crust( I use recipe on rice flour bag by bob mills)
5-6 large Roma tomatoes,sliced as evenly as possible
1/2 tbsp garlic powder
1/2 tbsp parsley
1/2 tbsp oregano
1/2 tbsp basil
1 tsp black pepper
3/4 c Monterey Jack
Pre heat to 375
In small bowl, mix all seasoning.
Place a layer of tomatoes on top of crust. Sprinkle a few pinches of seasoning over tomatoes, sprinkle about 1/4 c of cheese evenly over tomatoes and seasoning . Repeat at least twice more.
Bake about 25 min.
