10 egg whites
1 tbsp cold water
1 tbsp lemon juice
1 tsp pure vanilla
1/2 c fine raw sugar
3/4 whole wheat pastry flour
1/2 tsp sea salt
1 1/2 c. fresh strawberries
1 1/2 c. fresh blackberries
1 1/2 tbsp raw honey
Pre heat oven to 350 degrees.
Mix berries and honey together and set aside.
in a small bowl, mix flour and sea salt, set aside.
Using an electric mixer, beat egg whites, water, lemon juice and vanilla for about 4-5 min or til egg mixture resembles small soapy bubbles. Keep mixer on and slowly pour in sugar, beat until mixture is white and soft peaks form.
With a rubber spatula , sprinkle about 1/4 c of flour mix over the egg mixture. fold gently til mixed in, repeat 2-3 times til all flour is mixed in.
Pour mixture into an ungreased tube pan.
Bake for about 35 minutes or til golden brown and a toothpick comes out clean.
Invert hole of pan over on top of neck of a bottle to cool. about 25 -30 minutes.
Take pan off of bottleneck and gently slide a butter knife around cake to loosen, don’t forget to do this around the tube of pan as well. Let cake finish cooling upright on a rack.
Serve with berry mixture on top of slices..
