Fruit and Walnut Bread

This moist fruity bread is almost a tender, moist and sweet. I made it for breakfast , but am thinking it’s so much more! It could pass for dessert or a mid afternoon snack. It has fruits, walnuts and wheat. I didn’t add flax seed but I believe that I will next time .


1/2 c. whole white wheat flour

1. c. whole wheat pastry flour

1/2 c. raw sugar

1/2 tsp sea salt

2 tbsp baking powder

1/3 c. coconut oil,melted

1 egg

1/2 c. soy milk

1 tsp pure vanilla

2 tsp pure almond extract

1 small can pineapples, tidbits or use fresh

1c. fresh cherries ( or frozen,drained) chopped

1/4 c unsweetened coconut

1/4 c. walnuts. chopped


Pre heat oven to 400.

Spray a bread pan, set aside.

Pat dry all wet fruit

In a large bowl, combine all the dry ingredients. Gently fold in friuts and nuts, one at a time, coating well with the flour mixture.

In a separate bowl, combine the wet ingredients. Gradually pour the wet mix into the flour/fruit mix, stirring just til completly moistened.

Pour in pan and bake around 45 min or til golden brown and knife or toothpick comes out clean.

Let cool about 10 min, invert to plate. You may have to loosen sides with a butter knife.
