Jalapeno Cheese Corn Muffins

Ingredients

1 1/4 unrefined cornmeal

1/2 c. white whole wheat flour

1 tbsp unrefined sugar

1 tbsp baking powder

1/2 tsp baking soda

1/8 tsp sea salt

1 1/2 c. unsweetened soy milk

1/4 c. plain Greek yogurt

3 tbsp unsalted butter, melted

2 eggs

3/4 c. Mozzarella

3 tbsp chopped/minced jalapenos

Directions

preheat to 375. Spray 24 cup muffin pans.

In a large bowl, combine the flour, cornmeal, baking powder, baking soda and salt. mix well. Add milk,eggs, yogurt and butter. Whisk into dry mix til moist. Fold in cheese and peppers.

Spoon or pour in muffin tins about 1/2-3/4 full. Bake about 20-25 min or lightly browned.
