Wafflicious….or Waffles made with lots of yumminess..

Waffles or Waffliciousness…

Okay,I realize that wafflicious is not a word, but it’s what I said after my first bite of this waffle! I was so afraid that it would be dense or grainy but oh baby was I wrong! They turned out very light and fluffy. Waffle-delish, if I do say so myself!

Ingredients

1/2 c. whole wheat flour

1/2 c. white whole wheat flour

3/4 c. oat bran flour

1/2 tsp ground flax (opt.)

1 tsp. cinnamon

2 tsp. baking powder

1/2 tsp sea salt

1 1/2 c. unsweetened soy milk

3 tbsp coconut oil, melted

1 egg

1 egg white

1 tsp pure vanilla

2 tbsp raw honey

Directions

In a med to large bowl, combine all the dry ingredients. In a separate bowl combine all wet ingredients, whisk well. Add the wet ingredients to the flour mix, stir til well moistened.

Coat a waffle iron with cooking spray and pre-heat. pour desired amount onto a hot waffle iron. Cook til lightly browned. Repeat.

Serve with honey, fruit, pure maple syrup or whatever you want. Heck, eat them plain!
