Truly Decadent Chocolate and Caramel Cheese Cakes

While eating clean doesn’t mean that you have to give up desserts , it doesn’t recommend that you eat them every day..just keep them clean.. That being said, my husband loves the clean meals that I place in front of him ( Most of the time) but he likes his sweets after dinner. No busting sugar for him! I try to appease him by keeping some clean treats or desserts for him at all times. If I don’t have something ready, he will go to the pantry in search of whatever he can find. Funny thing about this is that he swears he doesn’t have a big sweet tooth.

Tonight, I made these cheese cakes, he gobbled his up, I didn’t even have to rinse the plate before putting it in the dishwasher! Happy Husband’s tummy = Happy Wife!


2 tbsp water

1/3 c. turbinado sugar

8 oz softened lower fat cream cheese

1/4 c. plain Greek yogurt

1/3 c. raw honey

2 large eggs

1 tsp pure vanilla

about 3/4 c. organic semi sweet choc chips, chunks or carob chips


Combine water and turbinado in a small sauce pan.Place on med-high heat and bring to boil. continue to boil gently til mixture coats spoon and slightly thickened. about a min.

Pour mixture evenly into 4 ramekins.

In a blender or food processor, add all other ingredients except the chips. Mix til smooth. stir in the chips. Spoon the mixture evenly into each ramekin. Place all ramekins in a baking pan. Fill pan with warm water til it is around half way up sides of ramekins. Bake for about 40-50 min depending on oven. Should be firm to touch.

Let cheese cakes cool about 15 min. Run a knife along edges to loosen,put ramekins in pan of very hot water to loosen caramel and chocolate. Then invert onto serving dishes.

I hope that you will enjoy this very rich and decadent dessert at least half as much as my hubby!
