Grown up Grilled Cheese

I remember as a small child going to our local varsity in my hometown to eat. I always had a grilled cheese sandwich with a pickle slice on each half and fries doused in ketchup. Grilled cheese is still one of my ultimate comfort foods filled with memories of days gone by.

Nowadays, though, I like to eat a clean and healthy grill cheese, I still am surrounded by the memories of this dish but not the fat..

Ingredients (each sandwich) ( feel free to use any fresh veggies )

2-3 white mushrooms, sliced

4-6 thin strips of yellow bell pepper

mozzarella cheese (I used shredded, enough to put layer on both pieces of bread)

2 slices whole grain bread

1/2 tbsp olive oil

olive oil cooking spray

Directions 

Heat oil in a small saute type pan. Saute mushrooms and bell til soft and slightly browned. Remove from heat.

On a slice of bread layer cheese, mushrooms , bells, then a touch more cheese. Top with second slice of bread. Heat the  sprayed saute pan again. Spray both sides of sandwich, cook til brown on both sides.

Today, I had a small side of unsweetened applesauce along with my sandwich. I didn’t need the fries doused with ketchup to think of sitting on that red bar stool eating my grilled cheese with the pickle on top with my parents.
