I have always loved oatmeal cookies. I love the texture , the taste and versatility of add in ingredients. This is just a oatmeal and golden raisin cookie but sometimes that’s all I want.
1/2 c. raw honey
1 tbsp unsulphered molasses
2 tbsp unsalted butter, softened
1 lg egg
3/4 c. white whole wheat flour ( unbleached)
1 tsp pure vanilla
1 c. rolled oats
1/4 tsp sea salt
2/3 c golden raisins
Preheat oven to 350.
In a large bowl, put in the honey, molasses,butter, vanilla and egg. Beat with hand mixer til well mixed and smooth. Slowly add flour, oats and salt to wet mixture. Mix well. By hand fold in raisins.
Drop by spoonfuls about 1 1/2 -2 in apart on baking sheet lightly sprayed with olive oil. Bake for about 10-14 minutes or til just golden. Let stand a couple of minutes before transferring to rack or plate..
