We eat a lot of chicken around here.. we also work a boat load of hours,so I don’t always want to spend hours trying to get dinner on the table. This recipe is delish and quick.
I also use my George Foreman grill at least 1-2 times a week. This was one of those nights though you will also need a saute pan. ( Directions below, if you do not own a Foreman grill)
1 8oz pkg sliced white mushrooms
1 tsp minced garlic
1 bell pepper , sliced or chopped
1 small onion
2 tbsp olive oil
boneless skinless chicken breast
Heat 1 tbsp oil in pan. Saute mushrooms and minced garlic til mushrooms are just browned . Remove from pan. Add remaining tbsp oil to pan and saute the bell pepper and onion til tender. pour mushrooms back in pan and keep warm.
Wash chicken and lavishly sprinkle basil, garlic powder and pepper on both sides, cook until done.. If you do not have a foreman grill, you can saute the chicken in a touch of olive oil til done..
Serve mushroom mix over the chicken. The mushroom mix is excellent over a steak,in a baked potato or in a wrap as well.
Some sides that are great with this chicken dish are sweet potatoes, baked potatoes, squash, salads , rice, and the list goes on.
I will take the left overs to work tomorrow and shred the chicken for a wrap, yummy!
