Aren’t the above stuffed peppers just the coolest thing?! These are not my doing but are the work of my son, Alex! He’s a great cook and apparently getting really creative in the kitchen! Thank you , Alex, for letting me share your fun Halloween Peppers.
4-6 orange bell peppers, de-seeded,(save top to put back on peppers)
1 cup cooked brown rice
about 3/4 browned lean hamburger meat ( or could use ground turkey)
3/4 c. whole kernel corn
about 1 cup of clean salsa
juice from one lime
1/2 cup shredded Gouda ( or mozzarella)
Mix all ingredients except peppers together. Spoon mixture into peppers, place top back on pepper. Put in baking dish and cover with foil. Bake 40 min @ 350.
Alex baked extra filling in separate dish. He could let it cool and freeze the extra for quick meal later on..
Side go with
Black beans , drained
chopped green onion
sea salt and black pepper to taste
Top with dollop of sour cream or Greek yogurt. Looks great plain as well!
