Salsa Verde Chicken Tortilla Casserole


3-4 6″ soft corn tortillas , cut into wedges

2 cups cooked chicken

1 c. whole kernel corn

1 jar Salsa Verde

1 1/2 tbsp whole white wheat flour

2 tbsp fresh cilantro , chopped

3 tbsp light sour cream

about 1/3 cup 2% mozzarella,shredded

1/4 cup jalapeno , chopped

extra mozzarella and cilantro for topping


Preheat oven to 350.

In a large bowl, combine the chicken, salsa, peppers, flour, sour cream and cilantro. Pour in small casserole dish. Bake for about 25 min. uncovered.

Arrange tortillas on the top, sprinkleĀ remaining cheese on top. Bake for additional 10 -15 min. Garnish with cilantro if desired.
