Black Beans and Rice

Ingredients

3 tbsp olive oil

1 large yellow onion, chopped

1 large green bell pepper, chopped

2 tbs minced garlic

1 tsp cumin

2 bay leaves

1 cup brown rice

1 1/2 cans black beans, drained and rinsed

3 tbsp apple cider vinegar

1 can diced tomatoes

1 small can green chiles

2 cups water

a pinch of sea salt

black pepper to taste

Directions

Heat oil in a large pot over med-high heat. Put in garlic, peppers, onions,bay leaves and cumin.. Stirring occasionally , cook for about 10 min.

Add the remaining ingredients, bring to a boil;cover and reduce heat to low. Cook for about 45-50 min.
