Chicken pot pie is another one of those comfort foods from our childhood. Pre-packaged and full of over processed flours,sugars,etc, it is also usually very unhealthy. Below is my version of a homemade, good for you grown-up chicken pie.
2 tbsp coconut oil, divided
1/2 medium purple onion,chopped
2 large cut up carrots
1 pkg sliced mushrooms
2 1/2 c. low sodium chicken broth ( or stock),divided
1/4 corn or potato starch
2 c. cooked chicken breast, chopped or shredded
1. black beans, rinsed
1/4 c. Greek plain yogurt
1/4 tsp sea salt
1/2 tsp black pepper
1/2 tbsp parsley
I use the recipe on the back of this bag for my crust. You can make any crust that you like, just keep it clean! I only make enough for one crust, roll it out. place some in bottom of pie plate and smooth into bottom with fingers, no need to go up the sides. After you pour filling on top of this, you will break up rolled out crust and put on top of it.
Heat 1 tsp of oil in a large skillet over med high. Add onions and carrots, stirring occasionally til tender. Remove from skillet and set aside. Put the remaining tsp of oil in same skillet. Add mushrooms, cook until browned. (about 5 min). Re add the carrots and onions to skillet. Add 2 c. of broth and bring to a boil; reduce heat to simmer. Mix corn starch and remaining chicken broth, pour into skillet, cook til sauce thickens. Stir in chicken, beans, spices, and yogurt . Pour in pie pan on top of bottom crust. Place broken up crust pieces on top. Place dish on a baking sheet and bake for about 35 min or crust is browned. Let cool at least 10 minutes before serving.
