1 3/4 c. whole wheat pastry flour
2/3 c. rolled oats
1 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp sea salt
3/4 c. chopped pecans
2 c. unsweetened applesauce
1/4 c. local honey
2 tbsp coconut oil
1 tbsp lemon juice
3/4 c. golden raisins
Preheat oven to 350.
Spray a 9×13 pan or casserole dish
Combine flour, spices and pecans in a bowl.
In a separate bowl, combine all the wet ingredients plus the raisins.
Add wet ingredients to flour mixture , just til combined. Pour batter in dish.
Bake for about 50 min or til knife comes out clean and golden brown.
let cool. can serve out of dish or invert into a serving platter.
