No Meat Chili

Ingredients

1 tbsp minced garlic

1 small red onion, chopped

1 tbsp olive oil

1 jar of tomatoes, diced or chunks (I used some that I canned, measured out they were about 30 oz, including the juice)

4 cups mixed beans( used black beans, pintos and red kidney) drained if canned (if can about 2 cans)

1 c. whole kernel corn

1 1/2 tsp cumin

1 1/2 tbsp hot chili powder

4 c. veg. broth ( low sodium)

1-4 dashes hot sauce

Saute the onion and garlic in large pot in the olive oil. Add all other ingredients, mix well by stirring. Bring to boil, lower heat to simmer for about 20-30 min.

Because sometimes you don’t want meat..or your daughter is a vegan.. or why not? This particular chili is more of a soup than a chunky bowl of chili, but so good.You can use less broth for a chunkier chili, if desired. Pair it with some cornbread,a sandwich or just eat it by itself.. I just had a small bowl for my afternoon mini meal.
