I was not going to actually do another pumpkin recipe for right now. I have seen so many other blogs doing everything pumpkin for fall and wanted to do something a bit different. BUT! I was looking thru my freezer and pantry trying to think of something for a small dessert for the hubby. One thing I have plenty of is pumpkin puree, so something pumpkin it shall be.
These are soft pumpkin and oatmeal cookies made with honey, the raisins give it a bit more sweetness. I hope that you enjoy them.
1 c. 100% whole wheat pastry flour
1/2 c. oats
1/2 tsp cinnamon
1/4 tsp sea salt
1/2 cup unsweetened applesauce
1/3 cup raw honey
2 tbsp unsulphered black molasses
2 egg whites
1/2 tsp pure vanilla
1/2 c pumpkin
1 c. golden raisins
1/2 c. pecans, finely chopped
Pre heat oven to 350
Combine flour, oats , baking soda, cinnamon and sea salt. set aside.
In a large bowl, combine applesauce, honey and molasses. I stirred by hand, you can use a hand mixer if you want.
Whisk in egg whites and vanilla. Stir in pumpkin. Slowly add the flour mixture, mixing well. Fold in raisins and nuts.
Drop by spoonfuls on ungreased cookie sheet. bake 10-12 minutes. Let cool 5-10 min before transferring them to a rack or if your like me, just spread out paper towels on a regular towel.
