The Clean eater in me usually tries to stay away from casseroles, the Southern cook in me loves them. Casseroles are usually laden with heavy creams, creamed soups out of a can, mayo and the horrible list goes on.. but sometimes I just want a one dish kinda meal.. I think I have made both sides of myself happy with this one. A clean casserole, who would’ve thought? I hope that you will enjoy as well.
1/2 lb 97% lean ground turkey
1 c. onion, chopped
1 can of organic pinto beans, mashed
1 1/2 tsp. cumin
1 1/2 tsp oregano
1 1/2 tsp cilantro
1/2 tsp garlic
1/2 tsp black pepper
3/4 c. chopped green chilies ( can use 2 small cans, just check the ingredients..)
1 c. mozzarella 2%
1 c. whole kernel corn ( frozen or fresh)
about 18-21 grapes tomatoes, halved
1/3 c. 100 % white wheat flour
1/8 tsp sea salt
1 1/3 c. unsweetened soy milk ( or low fat milk of your choice)
2 egg whites
Cilantro for garnishment
Preheat oven to 350
Brown the turkey and onion. Remove from heat and mix in the cumin, oregano, garlic powder,pepper,cilantro, half of the green chilies,1/2 c. mozzarella and mashed pintos. Mix well
Put the mixture in a med casserole dish, evenly. Now spread the corn and remaining chilies over the turkey mixture. Next, arrange the tomatoes over the corn.
top with remaining cheese.
In a med – large bowl, combine flour and salt. Then one at a time, add the milk, eggs and egg whites, whisk til well blended.
Pour the flour and milk mixture over the casserole. Bake for about an hour to one hour and 15 min or til it sets. Garnish with Cilantro.
This is great alone, but you could add a dollop of plain yogurt if desired.
