My husband and I love Italian foods! This recipe may become one of our favorite week night dishes. So easy and quick to throw together, maybe it will just find itself in your meal plan rotations as well!
8-10 chicken strips, boneless, skinless
3 tbsp melted coconut oil
2 tsp Dijon mustard
1 tsp Worcestershire sauce
1/8 tsp sea salt
1 c. 100 % whole wheat panko
about 3/4 cup shredded Parmesan cheese
In a small shallow bowl, combine the oil, worcestershire, and sea salt. In a medium bowl, pour the panko in.
Dip the chicken in the oil mixture and then coat in the panko, pressing in slightly . Place in a baking pan or dish. Drizzle remaining oil mix over the chicken. Sprinkle the Parmesan over all the chicken.
Bake at 350 for about 25 min or til golden brown and white inside.
You can use small boneless chicken breasts , I like the boneless strips for quicker cooking and easier portion control!
