This ain’t your canned broccoli soup, it’s oh so much better !
1 small onion, chopped
1 tbsp olive oil
1/4 c. whole white wheat flour
1/8 tsp sea salt
1/4 tsp black pepper
1 1/2 c. unsweetened soy milk ( or milk of your choice)
3/4 c. chicken broth ( your own saved or free range chicken broth, low sodium)
1 1/2 c. cooked fresh chopped broccoli ( or frozen)
1/2 c. 2% cheddar cheese
1. In a medium sauce pan, saute the onion in the olive oil until translucent. Stir in the flour and seasoning until blended. Slowly add the milk and broth. Bring to a boil. Cook and stir frequently for about 2 minutes or til thickened.
Add the broccoli. Cook about 2 more min on med high, stirring frequently. Remove from heat, stir in the cheese, do this until it is melted.
