Want to find a healthier quick breakfast or snack that’s also healthy for the kids? Try these Banana Choc Chip muffins! Full of only good things unlike that pop tart or sugary cereal. Did you know that a pop tart may say “made with real fruit,” but actually only has less than 2% of fruit?! These muffins are made with real fruit; whole bananas and unsweetened applesauce! The chips in them are actually carob and are optional. The carob could actually help transition your kids into accepting something a bit different for a snack or breakfast. They think they are having a “sweet bread.” My husband tried them yesterday and requested them for dessert last night..
Try them for yourself.
Pre heat oven to 350.
1 1/2 c. whole wheat pastry flour
1/4 tsp sea salt
1 tsp cinnamon
1 1/2 tsp baking powder
1 tsp baking soda
1 c. oats
1/4 c. raw honey
2 tbsp unsulphered molasses
1 egg, beaten
2 mashed bananas
1/3 c. unsweetened applesauce
3/4 c. vanilla almond milk (or milk of your choice +1 tsp vanilla)
1/2 c. carob chips or vegan chips
Mix all dry ingredients except chips in a large bowl. Mix all wet ingredients in a med to large bowl. Slowly pour wet into dry, mixing as you pour. Fold in chips.
Lightly spray muffin tins. Spoon in batter about 3/4 full in each muffin slot. Bake for about 20-25 minutes.
