Pumpkin Bread


Fall is somewhere around the bend, football has begun, school has started, our pumpkins are ready to be picked and the mums are beginning to bloom.. Everything is lining up except for the 100 degree weather.
Turn down the air conditioner a little lower,turn on the game and enjoy this pumpkin bread with a meal, as a snack or with breakfast.. Fall is just around the corner ..
Pumpkin Bread
1 1/2 c. Chopped pecans
1c. Unsweetened applesauce
1/2 c. Raw honey
2 tbsp pure maple syrup
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/4 tsp sea salt
1 2/3 c  pumpkin( or 1 can pure pumpkin)
2 c. Whole wheat pastry flour

Preheat oven.
Mix together pecans,applesauce, honey and maple syrup in a large bowl. Add soda,spices, and pumpkin, stir well. Add flour 1/2 c at a time, batter will be thick.
Pour into sprayed loaf pan. Bake at 350 for about an hour. It will be golden and fork will come out clean when testing..
