Baked Brussels with Feta

 As a kid, I can remember being forced to eat boiled Brussels laden with Velveeta cheese sauce. Even with all the cheese, I could still taste the Brussels…let’s just say, I wasn’t a fan. Every so many years, I would try them again as an adult, after the 2nd bite, I just didn’t want anymore. In the past couple of years, however, I was introduced to roasted Brussels.Who knew?!  I am now a huge fan! I really enjoy the fresh picked ones but the frozen work just as well . I did use the frozen for this recipe.

You will need:

about a pound of Brussels, halved

2 tbsp olive oil 2 tbsp Pure Maple Syrup

1 1/2 tbsp sweet chili sauce

1/4 cup of reduced fat feta cheese, crumbled

Preheat oven to 375.Spray a casserole dish  slightly with olive oil or coconut oil. In a large bowl, toss Brussels together with the other ingredients, except for the feta.

Cook for about 25 minutes, turning over Brussels about 1/2 way through cooking. Should be tender when done. Remove from oven , sprinkle feta over dish. Serve..Enjoy!
