I know,another blueberry muffin recipe…but I like to change things up…
2 cups whole wheat pastry flour
1 tbsp baking powder
1/4 tsp sea salt
2 egg whites,slightly beaten
2/3 cup raw honey
3 tbsp melted unsalted butter
1 cup plain Greek yogurt
1 1/2 cups blueberries
2 tbsp ground flax seed(opt)
Preheat oven to 350 degrees. Spray muffin pans with olive oil spray. This makes about 24 muffins.
In a medium bowl, whisk the dry ingredients together.Then in a seperate bowl,combine all wet ingredients,except the blueberries, mixing well. Add the wet ingredients to the dry. fold into each other, do not over mix. fold in berries. The batter will be thick..as pictured below.
spoon into muffin pans about 3/4 full. Bake for 20-25 min or til touch springs back and golden brown.
