In our house, we love pasta. (Who am I kidding? We love food!) So,when I was looking through the freezer to get dinner ideas,I saw chicken and I saw some wheat spaghetti noodles that I had already boiled for quicker meal preparations . Looking around the pantry and the fridge,I began the creation of this very easy meal.It was a hit at my table,hope it will be at your’s. Serve with a side salad and maybe some clean bread….
2-3 small boneless chicken breasts,cut in small bite sized pieces
1 1/2 cups sliced or chopped fresh mushrooms
1 bell pepper (any color)
1/2-3/4 cup sliced pepperocini peppers
1/2 tbsp each of
black pepper to taste,
1 jar of clean spaghetti or pasta sauce (I make my own but Newman has a clean one)

In a large saute or frying pan, pour in 2-3 tbsp of oil. Heat to med high. Put in chicken and seasonings,tossing meat to coat with oil and seasoning in pan. Cook til white inside and slightly browned on outsides. Remove chicken from pan. Put bell pepper and mushrooms in and mix well to get any left seasoning on the veggies .Put in a few more drops of oil if needed. Saute til tender.Add pepperocini,cook for about 2 min.Add spaghetti sauce,taste ,add more seasoning as desired. Add chicken,simmer about 5-10 min on low.Cook noodles according to package.Serve..
