Creamed corn

Nothing is much better than fresh corn in the Summertime. I love it just about anyway that it is prepared , grilled, steamed, boiled,etc.. But I think I have found my new favorite way to serve it! Creamed, without all the heavy cream and other nasty ingredients (like bacon fat) usually found in this delightful Southern dish..


6-7 ears corn

2 1/2 tbsp unsalted butter

1/4 c water

1 1/2 tsp raw sugar

1 tbsp unbleached flour mixed with 1 tbsp water

1/2 tsp sea salt

1 tsp (or more) black pepper

3/4 c. unsweetened soy milk

Cut the corn off the cob then with a sharp knife, scrape the cob to get all the corn juice and pulp.

In large pot, put the corn, juices, pulp,butter, water and sugar. Cook til tender.

Stir in flour-water mixture ,the sea salt and pepper.Stir well. Slowly add the soy milk and cook for about 2-4 minutes longer. Stir constantly and do not boil. It’s ready!
