Get up and Go Breakfast Bread ( or a snack bread)

This bread has everything I need to get me out the door in the morning! It also serves as a snack alternative, I cut my slices the way bread is normally cut, then I half that for the perfect portion!

Spray a loaf pan with olive oil spray. Can coat bottom lightly with whole wheat or pastry flour..

Preheat oven to 350.

Get Up and Go Bread

1 c. whole wheat pastry flour

1/2 c. ground flax seeds

1 tbsp cinnamon

1 tsp baking soda

1/2 tsp baking powder

1/2 c. unrefined raw sugar

3 mashed bananas

3/4 c. unsweetened applesauce

3 egg whites

1 egg

4 tbsp raw honey

1 tsp pure vanilla

1 c. golden raisins

1/2 c. rolled oats 

1 c. chopped pecans

In a large mixing bowl , combine flour, flax,baking soda, baking powder, cinnamon and sugar.

Then add all other ingredients , one at a time, Except the raisins, oats and nuts. Mix well, fold in oats, then raisins and nuts til well distributed throughout the mixture.

Pour into pan, cook 45-60 min, til knife stuck in middle comes out clean.. 

Let cool about 5-10 min, loosened on sides if needed with a knife and remove from pan.
