Over the holidays, the hubby smoked some pork and sliced it into boneless chops. I threw them in the freezer for quick meals down the road..Today is one of those days in which it is nice to pull my frozen already cooked meat, rice ,pre cooked blacked peas and spoon rolls out of the frozen tundra and serve without much effort on my part..
The hubby only seasoned the pork, so no sauce has been added but for moisture and more flavor, I thought a good homemade mopping sauce was in order.
I will warm up the chops in it and the left over sauce will be on the table for dipping.
2 cups apple cider vinegar
1 cup brown or Dijon type mustard
1 1/2 tsp black pepper
1 tbsp soy sauce
1/2-3/4c. clean sugar
1 tbsp molasses
1/2 tsp cayenne pepper
1/2 tsp sea salt
1-2 tsp Tabasco type hot sauce
Mix all together and heat on stove til just boiling, reduce heat and simmer, stirring frequently , about 5-8 min. use for basting, reheating smoked meats or as a dipping sauce..
