Creamy Italian Potato Salad

Growing up, I hated potato salad, mustard based or mayo based, didn’t wasn’t something that I was crazy about. Funny thing though, I grew up, got married…..nope, still hated the stuff. One problem, my husband loved it. As a new bride, I definitely wanted to make the things my husband liked.. ( never entered my mind to just go pick up some already made..) . I read cook books and played with ingredients until I created one that I actually liked!  I’ve served it for 30 years whenever potato salad was called for. New problem, I decided to eat clean and get healthy.. Actually no problem! I cleaned my recipe up and still love it with no complaints from anyone!

Here’s what you’ll need

1-11/2 lbs potatoes, peeled and cut in cubes ( depends on how much you want to make..)

2-3 hard boiled eggs or 1 whole and 2 whites

1 small chopped onion

1/2 c clean Italian dressing , can add 1/4 c more if want even more flavor!(sometimes I make my own or use the one pictured)

1/3-1/2 c of clean mayo,( I like veganaise but any you choose that’s clean is fine)( start w/ 1/3 c and work your way up as needed)

1/4 tsp sea salt (opt)

1 tbsp Mrs. Dash no salt Italian blend. ( I like fresh herbs, but my herb crop wasn’t great this year)

Black pepper, I use it heavily but that just me…

Boil potatoes and eggs til potatoes are soft. Drain. peel eggs and chop. In a large bowl, mix all ingredients til well blended. serve immediately or chill.
