Sometimes, it is amazing what you can create out of just a few ingredients! It’s January and I am in the plant business, so I am working through my fridge, pantry and freezer before I have to buy full blown groceries…this is actually best time to be creative! I had a few fresh items left along with some eggs…Ahh, quiche!
2 large eggs
6 tbsp liquid egg whites
2/3 c chopped bell pepper
1/3 c purple onion
1 c sliced mushrooms (about 4)
1 10oz pk frozen spinach , thawed and squeezed
1 tbsp minced garlic
1/2 cup your choice low fat cheese
1/4 tsp sea salt
black pepper to taste
Preheat oven to 350. Spray a glass pie dish.
Whisk eggs, add all other ingredients, mix well. pour in pie dish.
Bake for about 50 min
