Spicy Oven “Fried” Chicken

You will need

boneless chicken breast, 1 per person

1/2 cup soy milk

2/3 cups of 100 % whole wheat panko bread crumbs

1/2 cup oat bran

2 tbsp grounded flax seed

2 tbsp Mrs. Dash No Salt Spicy Seasoning

Hot Sauce, mild or hot

olive oil spray

 

Pre heat oven to 350. Generously spray a baking pan.

In a med bowl, mix all dry ingredients. In a separate bowl or dish , pour in the soy milk.  Take each Chicken Breast(one@ a time) and place in soy milk for a few seconds, then dredge in dry mix, pushing in crust a little as you coat the chicken. Place on Baking pan.  Drizzle or pour your favorite hot sauce over chicken. Generously spray each chicken on top and sides. Cook for about 25 min, then turn over and add more hot sauce on opposite side , if desired.. cook til golden brown and chicken is white throughout the inside. 

 *This recipe will cover approximately 5-7 small to med boneless breasts..

Left over chicken is great on its own or shredded for the next days lunch salad …
