Besides French toast, this is my go to comfort food. It is clean, but not that low in calories, so please use portion control!
You will need,
Dumplings, posted previously
1-2 cooked and shredded chicken breasts ( I use boneless, less fat)
3 cups organic low sodium chicken stock
1 cup broth from chicken
2 tbsp whole wheat pastry flour
1 tbsp corn starch
1/2 teaspoon sea salt
black pepper to taste,I personally use lots..
opt.. 1/2 teas Mrs. Dash no salt Italian Seasoning or fresh herbs
Boil chicken in med-large pot til white through out . Reserve cup of broth and set it and meat aside. In large pot, add all broth,corn starch and pastry flour. Whisk well. heat to boiling, add dumplings. turn down heat to low med, cook for 5 min. Add shredded chicken, cook til heated through .
