Bean Chili

Chili is great on these cold days and nights! This one is also vegan. I made a pile of it yesterday to put in the freezer for my daughter’s upcoming visit and for a Christmas party.

Bean Chili

3 tbsp minced garlic

1 med. onion, chopped

1 med to lg green bell pepper, chopped

2 tbsp olive oil

2 cans diced tomatoes( or jarred, fresh or whatever type you have on hand)

4 cans organic Tri Beans (Black beans, pintos and red kidney beans..or 1 can of each, choose any for your fourth bean),drained

2 tsp cumin

2-3 tsp of hot chili powder (I use lots more)

black pepper to taste

3 cups vegetable broth

In a med soup pot, saute the onion, garlic and bell pepper til just soft..



Add all other ingredients and stir well. Bring to a boil. Boil about 8-10 min and remove from heat.. It’s ready!!!

If you want it a bit less “soupy ” use less veg broth..
