I love strawberries, as a young girl growing up, I had a strawberry cake every year for my birthday, ordered strawberry sundaes on those special occasions we went to Dairy Queen and loved my Mom’s strawberry shortcake.. I mean what’s not to love about this berry? Anyway, here is my clean recipe for a strawberry cake that I have made for Thanksgiving this year.
1/2 cup unsalted butter
1 1/4 cup natural sugar
3/4 cup unsweetened soy milk
2 cups unbleached all purpose flour
1/2 tsp soda
1 tsp sea salt
1 1/2 tsp baking powder
1 tsp cinnamon
1 tsp pure vanilla
1/2 cup pecans, finely chopped
1 cup fresh or frozen strawberries, drained
Cream butter and sugar. Add eggs. Combine remaining dry ingredients, then add flour mix and milk alternately. Add vanilla. Stir in nuts and strawberries. Pour batter into well greased floured cake pans. Bake at 350 for about 30 minutes for 2 layers. I made 3 layers so only cooked about 20.Cool.
I iced with a cream cheese frosting. I don’t think powdered sugar is clean, but am allowing for the holiday, though I am using the organic to feel a bit better about it. Also used this for my cream cheese, you can use the lower fat cheese.
