Football games are here and holiday party season is almost upon us once again.. Try these little pizza puff appetizers at your next gathering.
1 1/2 cups whole wheat pastry flour
1 1/2 tsp baking powder
2 tbsp Mrs. Dash’s salt free Italian seasoning
generous pinch of sea salt
1 tbsp crushed pepper flakes
1 1/2 cups unsweetened soy milk
1/2 cups shredded Parmesan cheese
2 cups shredded mozzarella
1 bag low sodium or turkey pepperoni (uncured pepperoni is best for clean eaters), chopped up
clean pizza sauce
Preheat oven to 400. spray a mini muffin pan(s).
In a large bowl,mix all dry ingredients, then whisk in the milk and eggs. Stir in cheeses and pepperoni, let sit for 5-10 min.
Spoon into muffin tins, bake 15-20 minutes or until golden brown and puffed.
Serve with warmed pizza sauce for dipping
I use this one when no time to make my own..
I may try to use some small bits of sausage and bell peppers next time..
