As most of you know by now, Sunday is the day that spend a lot of time in my kitchen so I don’t have to the rest of the week. Most Sundays, I boil eggs, make breakfast to last a week or 2, maybe cut up some veggies for an upcoming dinner or for a mini meal, work on new recipes, etc, etc..
This week, I did all the usual stuff, made desserts for hubby , made a marinade for some shish ka bob tomorrow night..
But I also made cornbread for my dressing this upcoming Thanksgiving..I have already mixed it with my clean white bread, crumbled it all up and put it in a big bag for the freezer. I also pre-chopped my onions for the dressing and threw them in the freezer.The pumpkin pie is made as well.. I really don’t want to spend all the day before in the kitchen like I have for the past 30 years. I figure maybe 1/2 a day and I am good! I already made my yeast rolls a couple of weeks ago. Sometime this week, I will bake my sweet potatoes for my souffle and stick them in the freezer as well! Maybe next week, I will make my cakes and freeze the layers, then all I will need to do is ice them..
