Crust-less Spinach Pie


8 oz mushrooms, chopped
1 tsp minced garlic
1 tbsp olive oil
10 oz pkg frozen spinach, thawed and juice squeezed out
2 lg eggs
2 egg whites
1 c unsweetened soy milk
black pepper
2 tsp oregano
3 oz low fat crumbled feta cheese
1/4 c grated Parmesan
3/4 c shredded mozzarella

Preheat oven to 350……
heat oil on med high in skillet, add mushrooms and a little black pepper and the garlic. Saute the mushrooms just til tender. drain any excess liquid.

Line a sprayed pie dish with the spinach, next top with the mushrooms, then the feta cheese.

In a bowl, whisk eggs,then add Parmesan,soy milk, oregano and more black pepper to taste. mix well. Pour over the ingredients in pie dish. Sprinkle the mozzarella over the top. Place in oven for about 40-45 minutes.
I may eat a piece of the left over pie for breakfast or lunch with a small amount of clean salsa..
