My Quick Butternut Squash Soup

I like to make from scratch soups,but sometimes I am pressed for time like everyone else.I was craving a butternut soup yesterday and came up with this shortcut since I am out of squash at the moment..


1 tbsp unsalted butter

2 cloves garlic,minced

1/2 large onion,chopped

1  box of Pacific or Imagine butternut squash soup (usually buy the low sodium ,but pictured is a box I had at work..)

2 tsp cinnamon

1/4 tsp nutmeg

1 cup unsweetened soy milk

Sea salt and black pepper to taste

In med pan,melt butter,add garlic and onion. Saute about 5 minutes

Add all ingredients to garlic mix and heat. let simmer at least 30 minutes,stirring occasionally. Enjoy! Goes well with whole wheat bread or a salad!
