This may be simple to make, but tastes anything but!
Bake 2 med sweet potatoes in the oven til soft.. Cool til just to where you can handle..peel.
1/2 cup part skim ricotta cheese, room temp works best
1 tbsp pure maple syrup
1/4-1/2 teas cinnamon
1/4 cup shredded unsweetened coconut
1/4 cup unsalted pecans
Mash and stir all ingredients together, serve.
*to save time on those week night meals, next time that you bake sweet potatoes, cook extra. After cooled, peel and stick in freezer..will save you about an hour!
