3tbsp olive oil
1 1/2 tbsp minced garlic
3 cups whole wheat pastry flour
1 cup whole white wheat flour ( a little extra if dough is still sticky when kneading)
2 teas. cane sugar
1 teas. fine sea salt
2 packages dry yeast
2 cups of very warm water
3/4 cup shredded Asiago cheese
In a small skillet , heat oil on med heat. add garlic. stir frequently til garlic begins to turn brown. remove from heat.
In a large bowl, mix 2 cups of the pastry flour, sugar,salt and yeast. Add very warm water and the garlic and oil. Beat with electric mixer on med for about 3 min. scrape bowl occasionally . Stir in cheese and remaining flour.
On lightly floured surface, kneed the dough at least 5 minutes, adding small amounts of flour if needed. Stop when dough is smooth ..
Grease large bowl with spray. put dough in bowl turning it on all sides to coat it on all sides. Cover bowl loosely with plastic wrap and let rise in warm place for an hour to an hour and a half or til doubled in size.
Spray a large cookie sheet.Gently punch dough to deflate. Divide dough into 4-5 pieces. Shape each piece into rounds ( like a rather huge biscuit)
place each on sheet, Cover loosely with plastic wrap. Let rise for 30 min or til doubled in warm place.
Heat oven to 375, bake for about 20-25 minutes or til golden brown.
