1 pkg yeast
1/2 cup warm water
1/2 cup unsweetened soy milk, scalded then cooled
2/3 cup softened unsalted butter
3 cups whole white wheat flour
1 cup shredded fat free cheddar cheese
1/2 teas. red pepper
In large bowl, dissolve yeast in warm water. Add milk, butter,eggs,salt and 1 cup of the flour. Beat with electric mixer on low for a min then on med for 2-3 minutes scraping bowl constantly. stir in remaining 2 cups of flour, cheese and red pepper.
Cover and let rise in warm place about 45 min or it has doubled in size.
Spray a bread loaf pan. Stir down batter by kneading slightly for about a min..Spread evenly in loaf pan.. Cover and let rise another 40 min or til doubled.
Heat oven to 375. Bake for about 40-50 min or til loaf is golden brown..Loosen from pan immediately and put on rack to cool.
* I made 2 smaller loaves instead of one big loaf so my cut slices would be shorter height wise to help with portion control..cause I love bread!
